Basic Sponge Cake (Flavoured)



I love eating cakes but cakes are so expensive!!! A tiny slice of cake costs at least $3 at the neighbourhood bakeries and even up to $10++ at cafes or restaurants. Hence, I usually eat cakes only during birthdays. This is no longer the case now ever since I chanced upon this recipe for a simple sponge cake. Though I still have a very long way to go in baking my own cakes, this is a good beginning for me! After all, this is the first time I am baking a sponge cake. XD

Makes one 6″ cake

Ingredient list:

For the Egg Yolk Batter:

  • 2 egg yolks (I used eggs weighing about 65g each)
  • 10g of caster sugar
  • 25g of oil (I used canola oil)
  • 30g of milk
  • 10g of cocca powder (if you want a chocolate sponge cake)
  • 70g of cake flour

For the Meringue:

  • 2 egg whites
  • 20g of caster sugar

Basic sponge cake - ingredients needed

My Oven Settings:

160°C; top and bottom heat; about 16 minutes
(Settings would differ from oven to oven. Please experiment with yours!)

Steps:

1. Measure the required amount of egg yolks in a mixing bowl and add in sugar. Using a whisk or a spatula, lightly whisk until all the sugar has dissolved and the mixture becomes lighter in colour.

2. Stir in oil.

3. Pour in milk and stir well.

4. Add cocca powder if you want to make a chocolate sponge cake.

5. Sift in the cake flour in batches and mix well. Ensure that there are no pockets of flour in the batter. Set aside.

6. In a separate bowl, beat the egg whites until they foam and add in sugar slowly. Continue beating the egg whites till stiff peak.

7. Using a whisk, beat 1/3 of the meringue into the egg yolk batter.

8. Fold the remaining meringue into the egg yolk batter in two batches till well combined. (I used my hand but you could also use a spatula to fold).

9. Pour the cake batter into a baking pan and bake in a preheated oven at the settings mentioned above or until a toothpick inserted into it comes out clean.

10. When the cake is done, remove it from the pan and cool it on a wire rack.

Comments:

Once you get the hang of how to make a basic sponge cake, you can unleash your creativity and decorate it however you want! A plain sponge cake is not what I want, but I will bake my own cake, complete with cream and decorations, one day! Haha. *blissful smile* Here is a sneak peak of what it will become eventually!
