Double Chocolate Banana Walnut Muffins



I have been itching to bake as I last baked around one month ago! Hence, when I chanced upon this simple recipe, I knew this is it! I would bake this! I was smiling to myself when I am typing out the title of this post. It is such a mouthful yet I can feel myself salivate as I type out each word of the title. Haha! I am such a glutton. =p After all, it is not named “the best chocolate banana muffin” for nothing. Here is the recipe. Try it and let me know how you (fail to) resist the temptation of eating one after another!

Makes about 12 muffins

Ingredient list:

  • Approx. 250g of mashed bananas (I used about 2 large bananas)
  • 80ml of oil (I used canola oil)
  • 1 egg (my egg weighs about 65g)
  • 190g of plain flour
  • 30g of cocoa powder
  • ¼ tsp of baking powder
  • 1 tsp of baking soda
  • 180g of chocolate chips
  • 50g of walnuts

My Oven Settings:

175°C; top and bottom heat; about 20-22 minutes
(Settings would differ from oven to oven. Please experiment with yours!)

Steps:

1. Line a muffin tray with muffin cases.

2. In a large bowl, lightly whisk mashed bananas, oil and egg together.

3. In a separate bowl, sift flour, cocoa powder, baking power and baking soda together.

4. Mix in the above flour mixture to the bowl of mashed bananas. Stir until the mixture is well combined and ensure that there are no clumps of flour in the mixture.

5. Stir in the chocolate chips and walnuts.

6. Scoop the mixture into the cases, filling them ¾ full.

7. Bake them in a preheated oven at the settings mentioned above or until a toothpick inserted into the centre of the muffins comes out clean.

8. Cool them in the muffin tray for around 15 minutes before completely cooling them on a cooling rack.

Comments:

This is one of those recipes where I can smell the ingredients and the final product while baking. As mentioned before in my other posts, being able to smell the aroma makes me happy! Haha.

I love the chocolaty taste of these muffins. I also feel that the bananas make these muffins softer as compared to the double chocolate chip muffins while the walnuts give them an extra crunch. *yums!* However, I find them a little over-baked as the outer, top layer is slightly harder than the usual muffins I made previously. Perhaps, I will reduce the baking time slightly the next time.

        May i know what is the length of your muffin tray? Took a look at poon huat website and the dimension given was 355 x 268 x 30mm. Our oven length seems to be max 35cm. So wonder if it will fit well without scratching the side. Thanks. 🙂

        • Yea. I measured something like that too. Erm. I have to admit, it’s a tight fit. In order to prevent scratches, I do tilt the pan while putting it into and taking it out of the oven. So far, there are no scratches on both the oven and the pan. Hope it helps!

            I went to get the same muffin tray which is pretty good quality. It is indeed a tight fit, the tray can’t sit totally on the metal tray, got to loop side a bit and rest on the side groove.
