Cornflakes Cookies

Makes about 60 cornflakes cookies

Ingredient list:

  • 100g salted, soften butter (I bought the wrong one. Please use unsalted.)
  • 70g of caster sugar
  • 1 egg (~55g with shell)
  • 150g plain flour (To try about 175g of flour the next time so that the cookies are not that soft and “wet” during the preparation.)
  • 100g cornflakes

My Oven Settings:

150°C; top and bottom heat with fan; about 10 minutes
(Settings would differ from oven to oven. Please experiment with yours!)

Steps:

1. Cream soften butter and sugar together till well-mixed.

2. Beat the egg into the mixture.

3. Add sifted flour in batches, mixing till incorporated before adding more.

4. Stir in about 40g of lightly crushed cornflakes into the mixture.

5. Round about half a teaspoon of mixture then roll it into crushed cornflakes to code its exterior with cornflakes.

6. Lay on lined baking tray and press the top lightly.

7. Bake in a preheated oven at the settings mentioned above or until the cornflakes turn golden brown.

8. Remove cookies from tray promptly (though I think it would not stick to the tray even if you remove it only when cooled).

Comments:

This is one of the easiest cookies I have ever baked! However, during the preparation process, I cannot help but feel that the cookies could have been better if I had added vanilla. I shall add in one teaspoon of vanilla extract the next time to enhance the flavour. Nevertheless, the cookies still smell heavenly when they were baking in the oven! Try it!
