I had been wanting to bake chocolate lava cakes for a while now ever since I first ate it many years ago. However, as I did not have any ramekins, I had always put off baking it. After buying it off Taobao recently, I quickly searched for an easy-to-follow recipe for my lava cake fix!

Makes four chocolate lava cakes
Ingredient list:
- 110g of chocolate
- 110g of butter
- 50g of caster sugar
- 2 tbsp of plain flour
- 3 eggs
- 1 tsp of vanilla extract/essence
My Oven Settings:
220°C; top and bottom heat; about 10 minutes
(Settings would differ from oven to oven. Please experiment with yours!)
Steps:
1. Grease the inside of four ramekins with butter and lightly dust with plain flour. Shake off excess flour.
2. Melt chocolate over a pot of simmering water (at low heat) and add butter. Stir till melted. Set aside to cool.
3. In a separate bowl, lightly whisk eggs, sugar and vanilla together.
4. Add in the chocolate mixture and mix till combined.
5. Scoop the batter into the ramekins.
6. Bake at the settings mentioned above. Remove from the oven immediately after it is done.
7. Overturn and shake the ramekins to remove the cake. Serve with a scoop of ice cream if desired.

Comments:
This is a fool-proof recipe! However, wanting the cakes to stay hot when I serve them, I took out, plated it and served it to my sister first while leaving the rest of the cakes in the oven, with the oven door closed =.=” I later realised that this was a big mistake as the remaining heat in the oven continued to bake the cakes. By the time I removed them from the oven, the insides of the cakes had already been cooked and there was no more “lava” oozing out!!! Oh no! ='( Where the ramekins were not evenly coated with the floor, the cakes were also stuck to the ramekins and did not fall out prettily as a whole piece when I tried removing them.
Otherwise, I think I could improve more on the appearance of the cakes (they were loop-sided) and my dusting technique. Haha. For now, I shall enjoy my cake! =)
