I like to eat baked rice and hence, when the shredded mozzarella was on sale, I bought two packets and made my baked rice!
Recipe with Pictures
Serves 1-2 pax
Ingredient list:
- 100g of squid
- 200g of salmon
- 50g mushrooms (not pictured)
- 1 cup of rice (cooked and stored overnight)
- 1/2 can of pasta sauce (about 150g)
- Pepper and onion to taste
- 50g-80g of shredded mozzarella
My Oven Settings:
200°C; top and bottom heat with fan; about 20 minutes
(Settings would differ from oven to oven. Please experiment with yours!)
Steps:
1. Fry the squid first till white. (Avoid cooking it till it is completely cooked as the squid would be baked later)
2. Fry the salmon and mushrooms.
3. Add the rice and pasta sauce to the frying pan and fry till the sauce bubbles/boil. Add pepper.
4. Scoop half the rice to a baking dish. Spread shredded mozzarella over the rice to cover it.
5. Scoop the remaining rice into the backing dish. Cover the top with more mozzarella.
6. Baked in a preheated oven at the settings mentioned above or until the cheese has melted and turned golden brown.

- Add the rice and pasta sauce to the frying pan and fry till the sauce bubbles/boil. Stir in pepper and onion if desired.
- Scoop half the rice to a baking dish. Spread shredded mozzarella over the rice to cover it.
- Scoop the remaining rice into the backing dish. Cover the top with more mozzarella.
- Baked in a preheated oven at the settings mentioned above or until the cheese has melted and turned golden brown.
Comments:
This dish is so sinful because of the pasta sauce and mozzarella but it tastes very good! However, the next time I would also add in broccoli or some other greens to make it healthier. Yummy!
